I too would like to know how to do at least the first case: installing GhostBSD with the system on one drive (a SSD) and /usr/home on a second drive (HDD).
I will be using ZFS.

I also repeated the steps on the bare-metal and started the the process, but had to run out for a couple hours. It looks like ignoring the 2nd instance of the dialog was the correct course of action... am going to click Restart Now.
